Beautiful!!
Thank you!
This sounds like a great idea! I usually include apples and dried cranberries in a chicken salad, but mangoes are awesome!
Hi JC – apples and cranberries sound great!
I love lettuce wraps and these look so colorful and delicious-can’t wait to try them out!
Hi EA, thanks for dropping by again – I’d love to hear how you like the wraps. Cheers!
Stormy – this is making me so hungry. Looks delicious. I’ve tried mango salsa on fish tacos (so good!) but haven’t yet tried mango with chicken. We are lucky enough to have a great family friend who raises our chickens for us. So we have some very tasty chicken to try this recipe out with!
There’s nothing better than happy chickens. I hope you enjoy the recipe, Christie!
Hi Stormy!
Your pictures are fabulous and the thought of fresh mango right now is making my mouth water! Thanks for the sharing your culinary gifts!
xo, Tina
Why, thank you, Tina. I appreciate your kind words.
Mmmh I loove mango with chicken!! Yummy!
Looks like you’re not only a chef, but a photographer, too?
Hi Anja – yes! Although, you wouldn’t have thought so a couple of years ago. The improvements have been significant : )
Oh man…I shouldn’t have read this when it is time for lunch! I love the idea of including mangoes – they have such a bright flavor. And, thanks, to your post on how to cut one, I can actually make this with mango chunks instead of mango mush!

Enjoy, Jennifer! I was totally surprised by the best way to cut a mango when I first learned how years ago. Now it is the only way I cut them…avocados, too (although I scoop them out with a spoon rather than flip the skins).
Great Recipe Stormy! I can’t wait to try it. Healthy, Nutritious and Delicious! I’m printing it and also bringing it on vacation!!! YUM

Thanks, Anastasia! Have fun on vacation – I hope it’s someplace where the mangos grow on trees (not just make an appearance at the store)!
Oooooooo…. I can hardly WAIT to do this recipe with my family! We are so ready for spring and new foods. They are going to LOVE this! Just the idea of combining lime and mango and dijon is has got me excited. Going to the Mexican market to get the mangos. Thank you Stormy!
I hope you and your family enjoy it, Kathleen. Spring was definitely on my mind when I made these.
I wasn’t eating much fruit for the longest time, and mangoes were something I really missed! Now that I’m back on the fruit train, this looks like a great recipe to try.
Alex – I hope you enjoy it. We love mangoes, and my husband pretty much inhaled the salad. Ripe and sweet are the best to use.
