Colorful Mango Chicken Salad Lettuce Wraps

Mango photos, mango-cutting tutorials…maybe it’s time for a mango recipe!  And for those of us still on the edge of winter, this recipe will add color to dreary days.

This recipe works great with leftover chicken or a gluten-free store-bought roast chicken. Mangos add a touch of sweetness, while the lime adds tanginess. Recipe makes about 8 wraps.
Ingredients
  • • 2 cups shredded grilled or roast chicken
  • • 1 large or 2 small ripe mangos, cut into ½” chunks
  • • 1/3 cup chopped matchstick carrots
  • • 1/3 cup thinly-sliced red pepper
  • • 1/3 cup chopped cashews (optional)
  • • 1/4 cup sliced green onions
  • • Juice of half a large lime (about 2 ½ Tbsp)
  • • 2 Tablespoons olive oil
  • • ½ teaspoon Dijon mustard
  • • Salt and pepper to taste
  • • Romaine or other type of lettuce
Instructions
  1. Clean and pat-dry lettuce leaves – 1 for each wrap
  2. Place first 6 ingredients in a large mixing bowl. Stir together.
  3. In a separate bowl, blend olive oil, lime juice, and Dijon mustard. Add to chicken mixture and stir until well combined. Taste and add salt and pepper if desired.
  4. To assemble the wrap, add 2 heaping tablespoons of the chicken salad to each lettuce leaf. Serve
Notes

- Nuts are optional in this tasty lunch.
- You could also serve the chicken salad over leafy greens
- For a kick, add in 1/2 teaspoon of chili flakes

  4. Stormy – this is making me so hungry. Looks delicious. I’ve tried mango salsa on fish tacos (so good!) but haven’t yet tried mango with chicken. We are lucky enough to have a great family friend who raises our chickens for us. So we have some very tasty chicken to try this recipe out with!

  7. Oh man…I shouldn’t have read this when it is time for lunch! I love the idea of including mangoes – they have such a bright flavor. And, thanks, to your post on how to cut one, I can actually make this with mango chunks instead of mango mush!

      Enjoy, Jennifer! I was totally surprised by the best way to cut a mango when I first learned how years ago. Now it is the only way I cut them…avocados, too (although I scoop them out with a spoon rather than flip the skins).
