The refreshing flavors, eaten from a crisp tortilla chip, hit the spot.Whether you have a sailboat or a good fishmonger within reach or just your local market, learn how to create a simple, but sophisticated ceviche – reminiscent of the coast just south of the border – that you can snack on during a warm afternoon, serve as a party appetizer or as a side to a Mexican meal, or even use to top a salad of fresh greens.In this class, you will learn how to prepare a basic white fish ceviche and about the process that “cooks” the fish without a flame. We will also discuss ways to serve it, to adapt the recipe to add spice, and common fish and seafood substitutes. It’s the end of the week. You haven’t been to the store since last Saturday. And you really aren’t in a mood to cook. But, something’s telling you that take-out isn’t the answer.That’s where Friday Night Fridge Finds comes in. One Friday each month, we will engage in an impromptu group cooking experiment – open the fridge door, see what we’ve got, and draw on our creativity and pantry to come up with a quick, tasty, and hopefully healthy meal.I will demonstrate a meal using finds from my own fridge – and it could be anything, let me tell you – but always gluten and dairy free. We will discuss ways to use spices, flavor combinations, and basic cooking principles to throw together a quick meal from what you have on hand.
