I was making a shopping list this morning and realized I had dribs and drabs of certain ingredients, and way too much of others (i.e., they’ve been sitting around for a while and need to be used). This is a common theme in my cooking life.
I had about a ¼ cup each of hulled raw pumpkin seeds and shelled pistachios. In abundance are the dried goji berries I got a deal on and then forgot, as well as some dried white mulberries I found at the Persian grocery and then didn’t know what to do with. Turns out that mulberries taste great with walnuts. So, logically, I took the easy route and just threw them all together in a bowl, winding up with an exotic trail mix.
Personally, I think the combination is great – both in taste and appearance. The mulberries are very sweet, so they play nicely with the goji – particularly when tempered by the various nut and seed flavors.
I will definitely be repeating this combination and taking it on hiking trips this summer.
Clear-the-Cupboards Trail Mix Recipe
- ¼ cup raw pumpkin seeds, hulled
- ¼ cup pistachios, shelled and unsalted
- ½ cup raw walnuts
- ½ cup dried goji berries
- ½ cup dried white mulberries
I think some other yummy additions might be:
- 2 Tbsp flax seed
- 1/2 cup dark chocolate nibs
Fantastic way to use up all those dribs and drabs of nuts and seeds and dried fruit!
