Gluten-free Baking Powder Biscuits

Years ago, my family used to have a big breakfast on the weekends: eggs, bacon, pancakes…or biscuits.  Slathered with butter and raspberry jam or sandwiching a fried egg, biscuits were the bread I loved best.  Simple, comforting, and enhanceable with any number of toppings.  Losing them to gluten-intolerance was horrible, at least until I was able to come up with a good gluten-free version.

They don’t rise as much as a traditional wheat-flour biscuit, but they are fairly light and have an earthy flavor that is delicious with your favorite fruit preserves or dipped in soup.

 

Gluten-free Baking Powder Biscuits

This biscuit recipe is for those of you who crave a little taste of childhood and are intrepid gluten-free flour shoppers. If you don’t have all of the flours and xanthan gum, replace the first 5 ingredients with 1 3/4 cups of an off-the-shelf gluten-free baking mix instead. (NOTE: some GF baking mixes also include salt – do not add extra to the recipe.) Makes 10-12 2″ biscuits
Ingredients
  • 2/3 cup white rice flour
  • 1/2 cup sorghum flour
  • 1/3 cup tapioca starch
  • 1/4 cup garbanzo flour
  • 1 teaspoon xanthan gum
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/3 cup non-hydrogenated shortening
  • 1 teaspoon agave nectar or sugar
  • 3/4 cup non-dairy milk mixed with 1 tablespoon lemon juice
Instructions
  1. Heat oven to 450 degrees F. Blend all dry ingredients well. Cut shortening into flour mixture until finely crumbled. Stir in sweetener (agave or sugar), and add non-dairy milk and lemon juice gradually until dough forms a ball and pulls away from the sides of the bowl.
  2. Turn dough out onto a lightly-floured surface, roll out until 1/2″ thick, and use a 2″ biscuit cutter or drinking glass to cut biscuits. Place biscuits onto an ungreased baking sheet about 1″ apart, and bake for 10 to 12 minutes. Biscuits should be golden brown and crusty on the outside. Remove from baking sheet to cool.

    Please, please tell me where I can order the gluten-free baking powder biscuits. I am elderly and handicapped and cannot make them. And more than anything I have wanted them for a very long time. I am diabetic and also gluten-sensitive.

      While I made these biscuits from scratch (recipe above), there are a number of companies that make GF biscuit mixes. A lot of local grocery stores carry Bob’s Red Mill Wheat Free Biscuit & Baking Mix or 1-2-3 Gluten-Free Biscuit Mix in their health food sections. Bisquick has also started offering a gluten-free Pancake and Baking Mix that I’ve seen side-by-side on the aisle with their regular mixes. if you have trouble finding a gluten-free baking mix at your store, you can also order these products through online stores like Glutenfreemall.com or . Good luck – I hope you find a mix that will work for you.
