Paleo Power Lunch Ideas

Making and taking Paleo food to work to get you through the day doesn’t have to be a struggle, but don’t just take it from me.  Here’s how others manage the lunch conundrum.

“Use an avocado to hold leftover meat from dinner the night before or stuff one with tuna or chicken salad made with homemade Paleo mayonnaise.” –Nicole Tengwall, owner of Tranquil Baby

“I make a big crock pot of paleo chili every Sunday night that is then kept in fridge at work (or take each day I need it).  Another fast, easy one is yams/onions/carrots in a roaster pan with a bacon wrapped pork tenderloin on top with random spices added. Just made it tonight, lots for leftovers, cheap, super easy, super fast, and full on paleo ” –

“Sunday is my big cooking day, when I make a good-sized pot of some sort of stew, curry, or chili which I portion out to take in each day.

I like BLATs for lunch: Bacon, lettuce, avocado and tomato salad. Cobb salad (the same only with egg and olives) or salad nicoise are both good, too. However, they’re best taken to work with the ingredients in separate containers and then assembled at lunch time.

If I need to take breakfast to work, I’ll make hard-boiled eggs and have them with either cheese, cold cuts, or left over grilled chicken. Cold cooked sausage is great when you can either make your own sausage or get good paleo ones (no bread filler). Chili makes a great breakfast — but your co-workers will think you’re nuts!” –

  2. My favorite quick & easy portable paleo lunch is salad with tuna canned in olive oil, bring along a lemon to squeeze over the tuna–instant salad dressing, season as desired–salt, pepper… And a small avocado to chop and sprinkle over the top.
